Vinegar produced through static fermentation has a mellow and rich acidity.
Additionally, it features a refreshing, fruity aroma characteristic of high-quality rice vinegar, without the typical "mure aroma" often found in rice vinegars.

All the rice used as raw material for Roumei is domestically produced and organically cultivated, with no use of chemical synthetic pesticides, chemical fertilizers, or genetic modification techniques.
To produce vinegar from rice, it first requires the creation of "sake." This "sake" is made by hand following the traditional Japanese method called "Sandan Shikomi" (three-stage brewing).
By fermenting the "sake" again, it becomes vinegar. The fermentation from "sake" to vinegar is carried out using an ancient method called static fermentation, which takes approximately three months to convert 5,000 liters of sake into vinegar. While this process is not suitable for mass production, it results in a refined product with a gentle acidity.
This pure rice vinegar enhances the ingredients and envelops them with a gentle acidity. It can be used not only in Japanese cuisine but also in various other dishes.
