To make vinegar from rice, it is first necessary to make "sake." The "sake" is made by hand following the traditional Japanese three-stage brewing method.
Fermenting the "sake" again produces vinegar. The fermentation from "sake" to vinegar is done by the ancient method of static fermentation, which takes approximately 3 months for 5,000 liters of sake to fully convert to vinegar. Therefore, it is not suitable for mass production, but it results in an elegant product with a mild acidity.
A junmai vinegar that enhances ingredients and envelops them with gentle acidity. It can be used in a wide variety of dishes, not just Japanese cuisine.

Currently, most of the vinegar distributed in the market is primarily made from brewed alcohol. Fermentation is also accelerated mechanically, usually completing in an instant what normally takes several months.
