**About Bancha**
Bancha refers to leaves that have grown and become hard. Because the manufacturing process of Bancha varies by region, there are green leaves made similarly to Sencha and brown leaves roasted like Houjicha.
**Origin of Bancha**
There are several theories:
1. The word "Bancha" is derived from terms like "Bansan" (bamboo umbrella) or "Obanzai" (Kyoto dialect for side dishes), where the character "Ban" also means "everyday use," suggesting Bancha as an everyday tea.
2. It refers to tea picked between first and second flushes (first and second teas).
3. It originated from "Banchá," meaning late-harvest tea.
With the development of tea processing techniques, these terms came to refer to lower-grade Sencha.
**Stem Tea (Kuki-cha)**
During the finishing process of Sencha, only the stems of the new buds are extracted using a sorting machine. It is characterized by a unique refreshing aroma and sweetness. Among high-quality Sencha, the stems are called "Kari-gane" and are highly valued. The more glossy, vivid green stems tend to be sweeter. Thick, reddish-brown stems are from mechanically harvested, tough parts and are sometimes sold as "Bōcha" (stick tea) depending on the region.
