Quebec accounts for 90% of the world's maple product production, making it one of the largest producers globally. Only about 4% of the maple syrup from organic JAS-certified farms is available.
The sap collected is simmered over a wood fire to produce maple syrup. This traditional method, passed down among Canadian Indigenous peoples, is used less than 2% of the time today, as most producers now use gas. This preserved traditional technique results in a rare and carefully made maple syrup that maintains its authenticity.

Maple syrup is classified into four grades based on color, flavor, light transmittance, and aroma. Even within a 2-3 week collection period, the sap harvested early and late in the season can differ in color and taste.
