About Papaya Sauce
Papaya Sauce, a sauce with a slightly unusual name, was born in Fushimi, Kyoto in 1954.To ensure it would be widely loved, it was named "Papaya" from the wordplay of "Hachihachihachi" (八八八), which combines three "Hachi" (八) characters, representing continuous prosperity.Since 1973, we have been making our sauces with a unique, proprietary manufacturing method developed with the desire to "capture the full flavor of vegetables."We aim to create food products that value the taste of natural ingredients, using as few unnecessary ingredients as possible.Starting with sauces made without unnecessary ingredients, we continue to create delicious and safe products, including our Organic JAS certified organic series made from organic vegetables and organic raw materials.
Papaya's Commitment
Papaya's commitment lies in its unique sauce manufacturing method, which has continued for 40 years, and in creating flavors that utilize natural ingredients. One of the key ingredients that determines the taste of our sauce is vegetables.Until around 1971, our sauce manufacturing method involved boiling raw vegetables to create the base of the sauce. With this method, vegetable fibers that could not be fully dissolved remained and were discarded as residue. We thought, "What a waste! If we could somehow use the whole vegetable in the sauce without discarding it, it would surely be a more delicious sauce." After trying various methods and conducting extensive research, we developed a method to dissolve vegetables using the power of enzymes without boiling them.This method eliminated the need to apply excessive heat to the vegetables and prevented vegetable fibers from remaining, transforming Papaya Sauce into a sauce with greater vegetable umami and a unique flavor than before.At the same time, we realized that even though we were making sauce that utilized the umami of raw vegetables, including unnecessary ingredients in the sauce would compromise the natural flavor of the ingredients. Believing that nothing surpasses natural taste, we began creating products without chemical seasonings, sweeteners, artificial flavors, colorings, or preservatives.For the past 40 years, this philosophy has been the foundation of Papaya's product development. Currently, as an Organic JAS certified factory, this philosophy is applied to our household products, including our Organic JAS certified sauces and ketchup.
Papaya's Unique Manufacturing Method
Raw vegetables received in the morning are immediately washed and cut. Then, a blend of over 10 types of spices and enzymes is prepared. By slowly stirring for three days while warming to body temperature, the vegetables are dissolved to create our unique "vegetable extract." Using this "vegetable extract" results in a sauce with a distinctive umami and flavor.

Since we started making sauces, we have strived to create more delicious products."We want to make even more delicious products with better ingredients and methods. Good sauces come from good vegetables." With this thought, we arrived at "organic."As is widely known, organic foods are produced under very strict standards. In Japan, only products that meet the criteria established by the "Organic JAS Law" can be labeled as "Organic XXX."At Papaya, we use organic agricultural products (onions, carrots, celery, tomatoes, etc.) and organic products (vinegar, sugar, soy sauce, etc.) as raw materials.
