About Amaranth:Amaranth is a slightly bitter grain that has been cultivated since ancient times by the Incas in the Andes Mountains of South America. Its appeal lies in the fact that it can be eaten simply by removing the hull, as it has no shell. The young stems and leaves are also delicious as vegetables, and if you dry the stems and leaves after harvesting the seeds until spring, they can be made into a delicious health tea.
