- What is Amaranth?
Amaranth is a slightly bitter grain that has been cultivated by indigenous peoples in the Andes Mountains of South America since ancient times. Its shells are absent, so it can be eaten simply by removing the grains. Young stems and leaves are also delicious as vegetables, and after harvesting the grains, drying the stems and leaves until spring makes a tasty health tea.
Amaranth is packed with a surprising amount of nutrients, including various minerals, vitamins such as vitamin E, vitamin B2, vitamin B6, folate, and pantothenic acid, as well as dietary fiber. It contains about 30 times more calcium than white rice.
