These are traditional, authentic country-style pickled radishes (takuan) featuring a nostalgic, sharp acidity. We are committed to a completely additive-free pickling process using only salt and rice bran. These delicious pickles are also good for your health due to their low salt content; at approximately 4.3%, the salt concentration is significantly lower than that of typical commercially available takuan.
Furthermore, no additives are used. We use radishes grown under contract with local farmers (specially cultivated agricultural products), which are exposed to the cold winter winds and sun-dried. They are then aged in barrels for over six months. Every step of the process thereafter is performed by hand to pursue the original "flavor" of takuan.
While commonly sold takuan is made by soaking radishes in liquid seasoning for about a week, this takuan uses rice bran and rock salt to draw out the umami from natural ingredients. To add a subtle sweetness and aroma, we use mandarin orange peels and persimmon peels, with locally grown chili peppers added for accent. Kelp is also mixed in to enhance the umami. Every single ingredient is sourced from nature, and the pickling process requires a period of six months.
