Chinbin (senbei) is a Ryukyuan (Okinawan) confectionery. It is made by thinly baking a mixture of wheat flour dissolved in water with brown sugar added, on a griddle or similar surface, and then rolling it into a long, thin stick shape. Chinbin mix, pre-mixed for easy home preparation, is also commercially available. Its texture and appearance are similar to crepes. The packaging for Okinawa Seifun's chinbin mix is labeled "Okinawan-style brown sugar crepe."
The name is thought to be derived from the Chinese word "煎餅" (jiānbǐng), and is believed to be based on the Beijing pronunciation "jiānbǐng" or other dialectal pronunciations. While Chinese "jiānbǐng" are not always made from wheat flour, dishes made with wheat flour are developed in North China and the Northwest, from where it is presumed to have been transmitted to the Ryukyus. On the 4th day of the 5th lunar month, known as Yukkanuhi, it was offered to gods and the family altar to pray for the healthy growth of children, but it is now enjoyed in Okinawa as an everyday confectionery.
