Yamagata is one of Japan's leading soba producing regions. Its characteristics include a wide variety of flavors and shapes. This "Soba no Furusato Kiko" series is made using flavorful domestic stone-milled soba flour, bringing out the characteristics of soba from various regions within Yamagata Prefecture. This product, "Thin and Very Chewy Soba," is designed to be enjoyed for its smooth texture and, in particular, its chewiness. We use stone-milled soba flour made from soba beans from Hokkaido and Yamagata Prefecture, and use high-viscosity domestic yamaimo (Japanese yam) as a binder. The noodles are made thin, and the manufacturing process is devised to achieve a particularly strong chewiness. The soba beans used are stored at low temperatures to maintain quality, and are stone-milled immediately before noodle production to prevent "flour burn." We take meticulous care at every stage of preparation to ensure you can fully enjoy the elegant aroma of soba. To provide high-quality and stable products, we not only introduce the latest equipment but also manage quality by hand, rather than relying solely on machines. Without considering efficiency, we use a dedicated soba line and a 1-kilometer-long drying room, where the noodles are slowly moved and dried over a full day and night, allowing them to mature and develop a unique texture. Instructions

(1) Add one bundle of this product little by little to about 2 liters of boiling water and boil for about 8 minutes. (2) Take out 2-3 strands, and when they reach your desired firmness, rinse immediately in cold water and consume as soon as possible.
