Nishiki Miso's "Shiromiso" uses approximately 25% dehulled soybeans. It has a high proportion of rice koji, and is a miso with the umami of soybeans, stripped of any off-flavors, and an elegant sweetness. Its color is naturally white, derived from its ingredients.
Shiromiso is a short-aged, sweet miso. Therefore, it is useful not only for cooking but also for making sweets.

The soybeans and rice used as raw materials are exclusively Japanese-sourced, primarily from Shimane and Tottori prefectures.
