The seawater, with a salinity of 3.5%, is gradually concentrated to 24%, and salt crystals accumulate at the bottom to a depth of 12–15 cm across multiple sections of the salt pans.
While similar salt-making regions exist in France and Portugal, their salts tend to be slightly gray and cloudy. This is because the crystal layers are thin, causing soil to mix in during harvesting. In contrast, Sicily’s intense sun and constant wind promote rapid evaporation, resulting in thicker crystal layers and pure white sea salt. Although the process takes about 50–60 days, it produces high-quality salt.
The flavor profile is reminiscent of salted candies, with a natural sweetness and saltiness, along with mineral notes. Motia’s natural sea salt is widely used in making Parma ham and Sicilian anchovies, and is favored by artisans who prioritize ingredient quality.
