This is a coarse-grained (Grosso) type of sea salt.

SOSALT, which continues to produce natural sea salt using the same traditional methods of salt pans and sun-drying, is a leading manufacturer of Sicilian sea salt. Seawater is drawn into the salt pans using wind power from windmills. From spring to summer, as the temperature rises, the water evaporates through the power of the sun and wind, and the salt is moved between different salt pans. The sea salt produced in this way is rich in natural minerals.
SOSALT's Commitment to Salt Production:
SOSALT's salt production involves no other processing; it is made simply by drying natural seawater. This results in a sweet-tasting salt that is rich in the ocean's minerals. Salt production takes place from late July to September, when the sun's rays are strongest. The Sicilian sun accelerates the evaporation of seawater, and as the salt is repeatedly moved between multiple partitioned salt pans, seawater with a salinity of 3.5% is gradually concentrated to 24%, ultimately accumulating 12-15 cm of salt crystals at the bottom.
While there are regions in France and Portugal that produce salt in a similar way, their salt is slightly gray and cloudy. This is because the salt crystal layers are thin, and soil gets mixed in when the salt is harvested. The Sicilian sun is very strong, and the constant wind causes rapid evaporation of seawater, leading to faster crystallization and thicker salt layers, resulting in pure white sea salt. Although it is not the fastest method, it takes 50-60 days for the salt to form.
Its flavor has a sweetness like candy and a natural saltiness. You can also taste the minerals. Mothia natural sea salt is widely used in the production of Parma ham and Sicilian anchovies, and is chosen by artisans who are particular about the quality of the ingredients themselves.
