● "Kishimen" is
Noodles that are wider than regular udon. According to the dried noodle quality display standards, they are defined as those with a width of 4.5mm or more and a thickness of less than 2.0mm, made from wheat flour. The typical way to eat is with a soy sauce-based broth made from bonito and kelp dashi, topped with kamaboko (fish cake), spinach, and dried bonito flakes. Flat, broad noodles easily absorb the soup, making it ideal to enjoy the flavor of both the noodles and the soup.
● Origin of "Kishimen"
The Owari Plain has been blessed with the best water from the Kiso River and a favorable climate and natural conditions, making it a traditional noodle-producing region since ancient times. Among these, "Kishimen" is widely loved nationwide among food connoisseurs as a local specialty and a symbol of Nagoya Owari. There are various theories about its origin, including one from the Edo period suggesting it came from "Kijimen," a flat noodle with pheasant meat made for Nagoya's feudal lord, another that it derived from "Kishumen" brought from Kishu, and a theory that during the Warring States period, Takeda Shingen's retainers brought flat noodles like "Himokawa" or "Houtou" from Kanto to Owari. In reality, there are many theories, and no definitive consensus, giving it a slightly mysterious charm as "Nagoya Kishimen." Nagoya Kishimen-tei has preserved this tradition, conducting extensive research to offer delicious, affordable Kishimen, and has finally established a method of production and taste comparable to handmade noodles. This "Kishimen" can be said to be a natural food finished in a completely "old-fashioned" color and flavor.
