This is a medium-spicy "Curry Udon" with a good balance of Japanese-style dashi and spices. ~Nagoya Kishimentei~ Nagoya Kishimentei boasts a tradition of over 130 years since its founding in the 10th year of the Meiji era. It is also known as the first company to release kishimen nationwide. Carrying the pride of having introduced the specialties of Owari Nagoya to various parts of Japan, we will continue to create new traditions for the future. ●What is "Kishimen"? These are noodles that are wider than general udon. According to the Quality Labeling Standards for Dried Noodles, they are defined as being made from wheat flour with a width of 4.5 mm or more and a thickness of less than 2.0 mm. The general way to eat them is to pour a soy sauce soup made from bonito and kelp dashi over them and top with fish cakes, spinach, and bonito flakes. The flat noodles easily catch the soup, making them ideal for enjoying along with the flavor of the soup. ●Origin of "Kishimen" The Owari Plain has been blessed with the best water from the Kiso River and a gifted climate and natural features, and has been called a noodle-making region since ancient times. Among them, "Kishimen" is widely popular among gourmets nationwide as a specialty and synonym for Owari Nagoya. There are various theories about its origin, such as the theory that it came from "Kijimen," a flat noodle containing pheasant meat made for the Lord of Nagoya during the Edo period, the theory that it came from "Kishumen" introduced from Kishu, and the theory that vassals of Takeda Shingen brought "Himokawa" or "Hoto," flat noodles from the Kanto region, to the Owari region during the Sengoku period. In reality, there are many conflicting theories and no clear established theory, making "Nagoya Kishimen" a dish with a slightly mysterious charm. Nagoya Kishimentei has protected that tradition and conducted extensive research to provide inexpensive and delicious kishimen, finally establishing a proud manufacturing method and a taste that rivals hand-kneaded noodles. This "Kishimen" can be called a natural food finished with a completely "old-fashioned" color and taste.
