Yamasei Oni Karashi Pickling Base is a pickling base seasoned with "dashi ingredients" such as bonito, kelp, and mackerel, without using any chemical seasonings like amino acids.
You can pickle approximately 600g of your favorite chopped vegetables, such as napa cabbage, cucumber, cabbage, daikon radish, carrot, and turnip.

Yamasei's reason for focusing on spiciness is that we believe spicy mustard is the most delicious. It requires know-how to retain spiciness during the oil extraction process from mustard seeds, and it is slightly more expensive, but we insisted on spiciness because we want to create the most delicious mustard.

◆Commitment to Manufacturing Process
Mustard powder is made by grinding the oil-extracted mustard seeds into a powder. In the past, when manufacturing methods were not as efficient as they are today, mustard seeds were heated, placed in a bag, and squeezed tightly to extract the oil.
Mustard seeds contain over 40% oil. After using a continuous press to extract oil until the residual oil content is about 15%, some products are milled after removing the skins. Removing the skins is an extra step to make the powder fine. Furthermore, by pounding the seeds with a pestle (kine) all at once during milling, we achieve a fluffy mustard powder.
And the spiciness is the lifeblood of Yamasei's mustard powder.
Heat is inevitably generated during the oil extraction process, but if the temperature rises, the enzymes in the seeds become inactive, and the spiciness is lost. Yamasei's commitment lies in temperature control and adjustment to maintain the ideal, delicious spiciness.
