**◆ About Mountain Valley Apiaries**Mountain Valley Apiaries is a small, family-run apiary located at the northernmost tip of New Zealand's South Island, harvesting honey in Mount Richmond Forest Park. The father, Murray, manages the hives and bees, while the mother, Nicky, is in charge of bottling.
"The best honey requires the optimal environment, healthy bees, and good weather. After that, it's best to leave it as natural as possible with minimal intervention," says Murray.
The honey is not subjected to high-heat treatment or fine filtration, delivering the original taste, aroma, and nutrients such as minerals, amino acids, and enzymes in their natural state. Particles may be visible in the honey; these are beeswax and are edible.
**- How long is the storage period?**In fact, honey is sometimes called a natural preservative and does not inherently spoil. However, since the essential amino acids in the components begin to decrease slightly about four years after harvest, we set the expiration date to four years from harvest.
