Mountain Valley Apiaries is a small, family-run beekeeping operation located in the Mount Richmond Forest Park at the northernmost tip of New Zealand's South Island.
Marie, the father, manages the hives and bees, while Nicky, the mother, is in charge of bottling.
"Good honey requires the optimal environment, healthy bees, and good weather. Beyond that, the less human intervention, the better," says Marie.
They do not use high-temperature processing or filtering, delivering the honey's original taste, aroma, and nutrients such as minerals, amino acids, and enzymes in their natural state.
You may see granules in the honey; these are beeswax and are edible.
- How long is the shelf life?
Actually, honey is known as a natural preservative and does not spoil. However, after about four years from harvest, the essential amino acids in the honey begin to gradually decrease. Therefore, we set a shelf life of four years from the harvest date.
- Why does the honey's condition vary? Does the taste change?
First, local weather conditions, as well as the success of the flowering season and storage temperature, can cause differences in the taste and texture of the honey. Honey that has undergone minimal artificial processing is alive. Differences in taste and texture are all part of nature's bounty. Please enjoy it.
