Mountain Valley Kamahi Honey is a gift from nature that has not been altered by human hands.
It is honey derived from the Kamahi flowers that grow naturally in the wild.
The nectar source is from Kamahi flowers that are free from chemical fertilizers and pesticides, growing wild.
Kamahi honey has been used since ancient times by indigenous people as a remedy for sore throats and coughs.
Its flavor is gentle and creamy.
Within its mellow richness, you can feel the power unique to wild plants.
It has a refreshing aftertaste and pairs excellently with citrus fruits and dairy products.
Enjoy it spread on bread or pancakes.
Add it to hot or iced beverages; simply pouring hot water makes it delicious.
Use it as a seasoning for cooking, in dressings, or for baking.
As a sauce for cheese or meat dishes.
Combine with nuts or dried fruits.
Add to yogurt.
◆ About Kamahi
Like Manuka, Kamahi is a native plant of New Zealand, which blooms with fluffy white small flowers in summer.
Because its flowering period is very short, the weather during that time greatly influences the quality of the honey.
Depending on the harvest year, some honey may crystallize while others remain more liquid. Please understand this in advance.
◆ About Mountain Valley Beekeeping
Mountain Valley Beekeeping is a small, family-run apiary located at the northernmost tip of New Zealand's South Island, in Mount Richmond Forest Park.
Father, Marie, manages the hives and bees, while mother, Nikki, handles bottling.
As Marie says, "Good honey depends on an optimal environment, healthy bees, and weather. The rest is about keeping things as natural as possible—nothing beats nature."
We do not perform high-temperature processing or filter filtration, delivering the honey in its natural flavor, aroma, minerals, amino acids, and enzymes.
Particles sometimes visible in the honey are beeswax, which is edible.
- How long is the shelf life?
Honey is naturally a preservative and does not spoil in principle. However, after about four years from harvest, the amount of essential amino acids in the honey gradually decreases, so we set the expiration date four years after harvest.
- Why does the honey sometimes have different textures? Does the taste change?
Primarily, differences in taste and texture are caused by local weather, the flowering conditions, and storage temperature. Honey that is minimally processed remains alive. All variations in flavor and texture are gifts of nature. Please enjoy them.
