Mountain Valley Apiaries is a small, family-run apiary located in the Mount Richmond Forest Park at the northernmost tip of New Zealand's South Island.
Marie, the father, manages the hives and bees, while Nicky, the mother, is in charge of bottling.
"Good honey requires the optimal environment, healthy bees, and good weather. Beyond that, the less intervention, the better, keeping it as natural as possible," says Marie.
The honey is delivered with its original taste, aroma, nutrients such as minerals and amino acids, and enzymes intact, without high-temperature processing or filtering.
The specks you may see in the honey are beeswax and are edible.
- How long is the shelf life?
Actually, honey is known as a natural preservative and does not spoil. However, after about four years from harvest, the essential amino acids in its composition begin to gradually decrease. Therefore, we set an expiration date of four years from the harvest.
- Why is there a difference in the state of the honey? Does the taste change?
First, the local weather, followed by the success of the flowering season and the temperature during storage, can cause differences in the taste and texture of the honey.
