We use "Yuba Shō Tsumi Age Yuba," which received the Gold Medal in the Monde Selection food division for three consecutive years: 2009, 2010, and 2011.

Yuba, brought to Satsuma Province Bōzu by the Chinese monk Shenxiu during the ancient times, has long been an essential nutritional source for Japanese monks and a staple in temple vegetarian cuisine.
- Carefully selected soybeans, water, and skilled craftsmanship
Uses 100% domestically produced whole soybeans carefully selected. The water is natural underground water filtered through the Shirasu plateau in Kagoshima.
Soybeans are dehulled while still dried, then crushed. The crushed soy (kuzu) is cooked in a double-boiling vessel, then strained to separate into soy milk and okara. Removing the soybean skins eliminates off-flavors and brings out the soy’s natural umami. The double-boiling process ensures even heating and aging, removing unpleasant odors. The method of crushing the soy and extracting soy milk is a crucial skill that influences the flavor of the yuba, relying on experienced craftsmanship.

The prepared soy milk is heated in a yuba kettle, and the surface film formed is carefully picked by seasoned yuba artisans, resulting in a beautiful sheet of yuba. Our yuba factory is certified under FSSC22000, maintaining strict hygiene standards at all times.

1. Wash 2 cups of rice (if using no-wash rice, rinse lightly).
