Made with 30% buckwheat flour, using seaweed (funori) and yam as binders, resulting in noodles that are smooth and firm. As the origin of Niigata's representative Hegi soba, a rectangular box made from a cedar board measuring 30 cm x 45 cm is called a "Hegi," and it is said that the tradition began with placing about 30 round pieces, each rolled to be slurpable in one bite, arranged in a row, and eaten by 3 to 5 people.
