米菓の原料米には国内産米のみを使用することにし、海外米は一切使用しておりません。無選別こわれ入りです。直火でじっくりと焼き上げ独特の食感に仕上げました。ほぐれたおかきにまで塩ダレがしみ込んだ、くせになる旨さです。杵つき製法によりコシのある餅生地に仕上がります。焼き上げでは、熱入れと冷ましを繰り返した焼成方法で米の風味を最大限に引き出し、歯ごたえある食感に仕上げました。五島灘産の塩や風味豊かな枕崎産鰹節、北海道産昆布を使用して味付けしています。全工程に10日間以上の手間暇をかけ丹念に造りあげました。
