About Karigane:
Kyo-cha (stem tea) is made from the stems and veins of young tea branches and new buds. Like the buds and powder, it is called "demono" and is separated during the production of Gyokuro and Sencha. However, it has a different flavor from leaf tea. In Kyoto, Kyo-cha is also called "Karigane" or "Shiro-ore." Gyokuro Karigane (Shiro-ore) from Ujitawara is considered the highest grade.
Since photosynthesis, which converts umami components into astringency components, does not occur as actively in the stems as in the leaves, "more umami remains than in the leaves." Furthermore, it is rich in aromatic compounds that give it a roasted aroma and sweet floral notes, allowing you to fully enjoy the characteristics of stem tea.

How to Brew (for 3 servings):
Pour hot water at 60-70°C into the teapot, then pour it into the teacups to cool to 40-60°C. Add 2 heaping tablespoons (10g) of tea leaves to the teapot.
Pour the hot water from the teacups into the teapot and observe the tea leaves without closing the lid.
It is ready to steep when it turns a light green color, after 1-2 minutes.
Pour the tea into the cups, rotating the teapot to ensure an even concentration.
*For the second infusion, increase the water temperature and shorten the steeping time.
*The third infusion can also be enjoyed deliciously.
