The honjozo soy sauce, fermented in wooden vats using the same method since its founding by Kakuichi, a Hida Takayama brewery, is made with aged soy sauce from the brewery, which can be called the "spirit of the cellar" preserved for over a century, using natural cellar yeast and high-quality koji. This is a rich yet light soy sauce-flavored Takayama ramen, made with Hida-grown ingredients. The thin, curly noodles, which take only 1 minute to boil, allow you to easily enjoy the traditional taste. A portion of the profits are donated to forest conservation activities in Gifu Prefecture.
