*What is Mongolian King Kan Sui?
Sodium carbonate extracted and crystallized from geological layers in Inner Mongolia, cultivated over many years. In ancient Inner Mongolia, there was a noodle-making technique that involved kneading wheat flour with water from lakes containing alkaline salts like sodium carbonate, improving elasticity and texture. This method was passed to Japan along with the spread of noodles.
