A rich-tasting seasoning made by carefully fermenting and aging salt koji, then heat-drying and powdering it using our proprietary method. Made from rice koji and salt only, it is a natural ingredient. *What is Mongolian King Soda?
Sodium carbonate extracted and crystallized from geological layers in Inner Mongolia, cultivated over many years. Historically, in Inner Mongolia, there has been a noodle-making technique where wheat flour is kneaded with water from lakes containing alkaline salts like sodium carbonate, improving elasticity and texture. This method was transmitted to Japan along with noodle culture.

How to Enjoy:
