*What is Mongolian King Soda?
Sodium carbonate extracted and crystallized from geological layers in Inner Mongolia, cultivated over many years. Historically, in Inner Mongolia, noodles were kneaded with water from lakes containing alkaline salts like sodium carbonate, improving elasticity and texture. This noodle-making technique was transmitted to Japan along with the spread of noodles.
