Soken-sha Haruna Mountain Delicious Water-Grown Free-Range Egg Mayonnaise
This mayonnaise is made using egg yolks from free-range chickens that were born and raised drinking natural underground water in the foothills of Haruna Mountain, Gunma Prefecture. The chickens are housed in free-range coops where they can fly freely and move around comfortably, producing eggs with vibrant yolks.
We have crafted this mayonnaise to highlight the natural flavor of the ingredients without adding unnecessary additives, resulting in a gentle and mellow taste.
■ Point 1: Free-range eggs produced with animal welfare considerations
Animal welfare refers to the concept of "animal well-being," which involves raising livestock in comfortable environments to reduce stress and disease risks.
This product uses only the yolks of "Sun-colored" free-range eggs, which are produced in environments where chickens can fly freely and move around naturally, respecting their sensitivity.
The chicken coops are multi-tiered free-range systems (aviary method).
■ Point 2: Made with eggs from JGAP-certified farms
GAP standards are guidelines that producers follow to promote sustainable agriculture.
JGAP is a standard developed in Japan, tailored to domestic conditions.
Eggs used in this product are produced on farms that meet standards covering hygiene management, labor management, farm management, environmental conservation, human rights, livestock health, and animal welfare, and are certified accordingly.
■ Point 3: Commitment to high-quality ingredients beyond eggs
The oil is a blend of rapeseed oil and safflower oil, both extracted solely by pressing.
Vinegar used is apple vinegar.
Salt contains nigari (magnesium chloride).
Sugar is made from sugar beets grown in Hokkaido.
Spices include mustard, resulting in a light and mellow flavor.
No seasoning agents (amino acids) are used.

Raised on a lush farm at the foot of Haruna Mountain, chickens drink plenty of natural underground water, a gift of Haruna, and are fed a self-mixed feed made from domestically produced rice.
Since the quality of eggs varies depending on the feed, water, and diet, we pay particular attention to these ingredients.
