"Amakusa no Shio" is a product that maximizes the appeal of sea salt.
Its flavor, where saltiness, bitterness, sourness, and sweetness are in harmony, is born from 100% seawater from the beautiful Amakusa Nada, with nothing added, through numerous innovations and the labor of artisans.
It has the characteristic of dissolving very easily in water. It blends well with ingredients, making it a delicious salt that brings out the quality of the ingredients and can be used with peace of mind.
By filtering the pumped seawater through a special 10-micron filter, impurities such as eggs of fish and plankton, which are common in the rich sea, and even small debris like their carcasses are almost entirely removed, resulting in pure white salt.
Instead of using methods of separation by electricity or membranes, we have chosen the method of simply boiling down the seawater.
However, the equipment for boiling down seawater is automated, and it is produced using our unique patented manufacturing method, such as a flat-pan evaporator that utilizes steam heat.
By devising the intermediate processes, most of the "gypsum content" in the seawater, which is the cause of poor solubility, is naturally removed.
In the latter half of the process, the salt is "aged" for at least two days to carefully cultivate mineral crystals.
From this point on, many steps, such as manual work by artisans and individual quality inspections, are taken to finish it into high-quality salt.
Furthermore, it is dried using hot air and then finely milled to create uniform grains, resulting in a free-flowing salt with a moisture content of 0.5%.
