Wind and Light Kikai Island Brown Sugar (Kachiwari) is made from specially cultivated sugarcane grown on Kikai Island, which has been recognized as "Japan's Most Beautiful Village."
The island, formed from uplifted coral reefs, has slightly alkaline soil. The brown sugar and raw sugar produced from this soil have a rich flavor, and the islanders say they are "unsalted mirin" (a sweet cooking sake).
In 2006, a young man named Kojiro Sugimata came from Tokyo to Kikai Island. He fell in love with the island's beautiful environment and the kindness of its residents, and moved there to start cultivating sugarcane and making brown sugar.
Since the beginning of cultivation, he has practiced farming using only organic fertilizers. In 2012, specially cultivated sugarcane was introduced, and brown sugar was also produced.
The brown sugar made by Mr. Sugimata has a light, refined richness, and its color is white, which has led to comparisons with "Wasanbon" (a high-quality Japanese sugar).
Regarding its white and elegant taste, Mr. Sugimata says:
"As the chemical fertilizers and substances decrease from the fields, the aroma when boiling the sugarcane in the pot improves, and the impurities become whiter and sweeter. The color of the juice itself is also transparent," he explains.
He asks, "Have you ever tasted sugarcane directly?"
"The flavor of that juice, the clear and refreshing sweetness—that is the taste of brown sugar I aim for."
The raw material is only the juice extracted from specially cultivated sugarcane; no raw sugar or other additives are used.
