Kaze to Hikari Kikaijima Kokuto (Kachiwari) is a brown sugar made from specially cultivated sugarcane from Kikaijima, an island certified as "The Most Beautiful Village in Japan."
The island, formed from a raised coral reef, has a weakly alkaline soil. The brown sugar and granulated sugar produced from this soil have a rich flavor, which islanders describe as "no need for mirin."
In 2006, Kojihiro Sugimata, a young man who moved from Tokyo to Kikaijima, fell in love with the island's beautiful environment and the kindness of its residents. He decided to settle on the island and began cultivating sugarcane and making brown sugar.
He has practiced farming methods using only organic fertilizers since the beginning of cultivation. In 2012, specially cultivated sugarcane was born, and brown sugar was also produced.
The brown sugar made by Mr. Sugimata has a light yet refined richness and a white color, leading it to be compared to "Wasanbon" (a type of fine-grained Japanese sugar).
Regarding its white and refined taste, Mr. Sugimata explains:
"As chemical fertilizers and chemical substances decrease in the fields, the aroma when cooking the sugarcane in the kettle becomes pleasant, and the scum becomes white and sweet. The color of the juice itself becomes clear."
"Have you ever bitten into a sugarcane stalk? That juice's flavor, its clear and refreshing sweetness, is the taste of brown sugar I aim for." The only ingredient is the pressed juice of specially cultivated sugarcane; no granulated sugar or other additives are used.
