ナス科の植物を乾燥させて粉末状にしたもの。
レッドチリペッパーのチリと同じ種類ですが、味や風味が穏やかなため、大量に投入しても料理の味を損なわない。
色が鮮やかで主に色付けや風味付けに使われます。
細長くて辛味がほとんどない唐辛子の完熟した果肉を、乾燥後粉末にしてパプリカパウダーを作ります。
マイルドな香りとかすかな甘味があり、鮮やかな赤色をしているので煮込み料理やケチャップ、ドレッシングなどの赤色の着色と香りづけに使われます。
【使い方】鶏肉のクリーム煮やリゾット、サラダ、タジン鍋などに混ぜると食卓が華やかになりますよ♪
