Before salt production by salt pans began, there was a method of salt production called "Moshio-yaki" (seaweed salt making) that was practiced throughout Japan from the Jomon period to the Heian period. "Ain no Moshio" is made using modern hygienic facilities based on the concept of this ancient salt-making technique. The raw materials are not only seawater but also seaweed called Hondawara. Therefore, it is rich in the blessings of the sea from seawater and seaweed. The light brown color is due to the iodine content. It is a salt with a mellow taste, so much so that you can hardly feel its saltiness or sharp edges.
