The main ingredient of the granola is thick, American organic oats. We use oats of varying thickness and size, depending on the origin and manufacturer, for different purposes. This creates a satisfyingly firm texture.
While granola typically uses wheat flour, we bake ours with freshly milled, fragrant brown rice flour. By milling the easily oxidized brown rice flour in small batches and always using it fresh, we bring out a deeper flavor.
We use unrefined sugar produced from Kyushu to Okinawa, which is rich in vitamins and minerals as it is not refined. It is characterized by a subtle, kombu-like aroma and elegant sweetness, leaving richness and umami even when used in smaller quantities.
