当店のそうめんは、稲庭うどんの製法を用いています。 普通、手延べそうめんは、油を塗って細く延ばしますが、当店では、油を使わずに延ばします。 そのため、酸化することもなく、胃にもたれることもなく安心してお召し上がりいただけます。

小麦粉(日本（北海道）), 食塩(日本), 水(日本), 澱粉(*澱粉は打ち粉として使用しています)
秋田県の名産品「稲庭うどん」は、日本を代表する「手延べ乾麺ブランド」として知られ、讃岐うどん(香川県)、水沢うどん(群馬県)とともに、日本三大うどんの一つに数えられています。当店の稲庭そうめんは、北海道産小麦粉を100%使用し、塩・栗駒山系から流れる豊富な清水のみを原料に、練り・あやかけ・乾燥まで四日間かけた伝統製法で作り上げています。熟成を重ねながら作り上げたそうめんは、手作りの証として麺の切断面に無数の気泡があいているのが特徴です。茹で上がりが1分半と早く、麺に光沢があり歯ごたえ良くうまみがあります。その日の天候に合わせて、塩分量や熟成時間などを見極める勘は、稲庭そうめんの美味しさを生み出す職人技の一つです。衛生管理と品質管理を徹底し、農林水産省が制定した特定JAS認定工場を国内第一号で取得致しました。北海道産小麦の豊かな香りとつるりとした喉ごしをお楽しみください。
