It features quick boiling time because the noodles contain air bubbles. Boiling time is around 3 minutes. You might remember that typical udon noodles take about 10 minutes to boil.
Ogawa's udon takes 4 days to make. By taking time for aging, air bubbles are created within the noodles. Then, by kneading thoroughly, the gluten in the wheat surrounds and encloses the air bubbles, preventing them from breaking. These air bubbles maintain their shape for a long time even after boiling, creating a particularly firm texture compared to other noodles, despite being thin.
That is Ogawa's Inaniwa Udon. The noodles have a distinct square shape, giving them a unique smooth texture. The rich wheat flavor, smooth and delicate taste, firm texture, and glossy transparency offer a taste unlike any other noodle.

"Inaniwa Udon," a specialty product of Akita Prefecture, is known as a leading "hand-pulled dried noodle brand" in Japan and is counted as one of the three great udon noodles of Japan, alongside Sanuki Udon (Kagawa Prefecture) and Mizusawa Udon (Gunma Prefecture). Our Inaniwa Udon is made using 100% Hokkaido-produced wheat flour, only abundant clear water flowing from the Kurikoma mountain range as raw ingredients, and a traditional four-day manufacturing process from kneading, stretching, pressing, to drying. The udon, created through repeated aging, has well-defined noodle edges and is characterized by countless air bubbles on the cut surface as proof of its handmade nature. It boils quickly in 3 minutes, has a glossy appearance, a firm texture, and a rich umami. The intuition to determine salt content and aging time according to the day's weather is one of the artisan techniques that bring out the deliciousness of Inaniwa Udon. We have thoroughly implemented hygiene and quality control and were the first in Japan to obtain certification from a special JAS factory established by the Ministry of Agriculture, Forestry and Fisheries.
