◆ What is Yukishita Carrot?

The encounter with Yukishita Carrot dates back to 1991 (Heisei 3). It was spring in a snow country still covered with about 1 meter of snow. I witnessed a rare scene of hand-harvesting in the cold. Typically, carrots are cultivated using a "spring sowing, autumn harvesting" method. At that time, it seemed unusual to me, but I learned that this is an ancient farming method in snow-heavy regions.
