IBONOITO Hand Pulled Somen Hine Jokyuhin 50g x 36 ・ "IBONOITO" is a masterpiece from the Banshu region, meticulously crafted by artisans through an 11-step traditional hand-pulled noodle-making process passed down for approximately 600 years. ・IBONOITO Hine Jokyuhin 50g x 36 bundles ・Value size ・"Hine" refers to the raw noodles produced and aged for one year in a specially managed warehouse. ・"Hine-mono" are rare products, accounting for only about 10% of IBONOITO's total production. ・＜Difference in taste＞ Somen noodles carefully aged have a significantly improved taste, with a stronger texture and a smoother mouthfeel. While the somen noodles are carefully aged in a dedicated storage warehouse, the enzymes contained in the flour become active during the hot and humid rainy season, causing the lipids within the somen noodles to change. This is said to affect the starch and protein of the somen noodles, further improving their texture and mouthfeel. This is a historically significant hand-pulled somen noodle with a traditional obi from the "IBONOITO" brand. Utilizing traditional methods, it is repeatedly aged and stretched through 11 steps before becoming a product. It accounts for approximately 80% of the total production volume and is our most beloved masterpiece. "Hine (old)" refers to new somen noodles produced in winter, stored in a warehouse, and aged for one year through the rainy season. Aging further strengthens the texture and eliminates any oily smell. The peak of its deliciousness is one year after production. No coloring agents are used.
