急勾配な火山灰の土壌に、コーヒーツリーがどっしりと植えられ、
ホンジュラスでは最高峰の1500mを超える素晴らしい栽培環境にミゲル・エンジェル氏の農園はあります。

2000年以降、HCAFEや輸出業者の指導の下、
高品質コーヒーの栽培に特化し、カップオブエクセレンス入賞を目標に品種の選択や精製方法や乾燥方法を見直してきました。

2012年には念願のCOE入賞を果たし、スペシャルティコーヒーの生産者としての地位を確立。
近年は、天候やサビ病などの影響を受け、最盛期の半分まで収穫量が減っていますが、
品質は安定しており、今後の収穫回復と品質向上に大きな期待を寄せています。
