Haskap's official name is *Lonicera caerulea var. emphyllocalyx*, and it is a deciduous shrub belonging to the honeysuckle family. It is native to Sakhalin, Siberia, and other regions, and was brought to the Yufutsu Plain in Hokkaido by migratory birds.
Cultivation is best suited for cold climates, and it is a recommended crop in Hokkaido. There are many varieties, but they have a good aroma, a refreshing tartness, and a slight bitterness. This bitterness was historically valued by the indigenous Ainu people as a "fruit of eternal youth" and a miraculous medicine due to its medicinal properties. The word "haskap" originates from the Ainu word "hasikappu," meaning "fruit that grows in abundance on branches."
The harvest season is approximately one month, from late June to late July, and the berries are hand-picked one by one during this short period. It takes 3 to 5 years from planting the seedling for the tree to mature and bear fruit for harvest. Because the berries have soft, delicate skins, they are immediately flash-frozen after harvesting for preservation.
In recent years, awareness and popularity have increased, but the total harvest volume in Hokkaido is limited, resulting in a shortage of raw materials.
The berries are a deep purple color and are rich in anthocyanins. They contain a high amount of a component called cyanidin, which is beneficial for the eyes, and is said to be several times higher than in blueberries. They also have strong antioxidant properties that help prevent aging and are rich in iron, vitamins, and calcium, making them popular among women.
This is a handmade jam made using haskap harvested in Hokkaido, with only sugar and lemon juice added, preserving the texture of the berries. No chemical seasonings, artificial colors, or synthetic preservatives are used.
