Aiming for the deliciousness of each grain called "Gai Kō Nai Nan" (hard outside, soft inside) from Kyō no Kome Shinise Yashiro-me Gihei.
In the soaking process, water temperature is matched by adjusting heat and soaking time. After allowing the rice to absorb water thoroughly, pressure is applied up to a maximum of 1.3 atmospheres, raising the boiling point to a maximum of 107°C for high-temperature heating.
After removing excess moisture, pressure is maintained, and steam at up to 107°C is used to steam slowly while maintaining high temperature.
Achieved the "Gai Kō Nai Nan" finish recognized by Gihei Yashiro-me using a rice cooker.
