Product Introduction
We directly procure芽かぶ (me-kabu) from the Naruto Strait area from local fishermen (a friend of our company president) and knead it into the noodles. The noodles have a vivid jade green color, and as you chew, the aroma of the sea spreads in your mouth. They have a chewier texture compared to traditional white noodles.
Since no synthetic additives are used, even small children can enjoy them with peace of mind.
In terms of nutrition,芽かぶ (me-kabu) is kneaded into the noodles, containing a well-balanced variety of vitamins and minerals comparable to land vegetables. For one serving (per 100g of raw noodles), it contains 3g of dietary fiber (equivalent to about 3 heads of lettuce). It also includes nutrients derived from芽かぶ (me-kabu), such as minerals, which are rarely found in conventional somen noodles.
The manufacturing process involves traditional craftsmanship methods that have become rare nowadays, such as "Kobiki" (small pulling) and "Kadohoshi" (door drying). It takes about 40 hours over 12 steps to repeatedly perform aging and stretching using our unique "Multi-stage Aging Method," producing each strand with meticulous care.
For cold noodles served with noodle sauce, you can dissolve chopped green onions and wasabi into the sauce and enjoy a smooth bite. It is also recommended to serve in a bowl or to highlight the noodles' color by mixing with marinated tomatoes to make a salad.
