Akashi-yaki, known locally as "Tamagoyaki," has been loved by residents of Akashi City, Hyogo Prefecture, since ancient times and is a representative local gourmet.
Its history dates back over a hundred years, making it older than Osaka's takoyaki, and it was a major inspiration for the creation of takoyaki.
Unlike takoyaki, which uses different ingredients (flour), it features a unique fluffy and creamy texture made with wheat flour and starch (also called floating flour), and is characterized by being dipped in dashi soup before eating.
