This is a fermented and aged "awase miso" (mixed miso) made by a soy sauce, miso, seasoning, and dressing manufacturer founded 152 years ago in Oita Prefecture, Kyushu, Japan. It is made with rice, soybeans, and barley, representative of Kyushu, and has a sweet, mellow flavor with a fermented aroma. It is an ideal miso not only for miso soup (and all kinds of soups) but also for simmered dishes, stir-fries, and vinegared miso.
