こちらは太郎次期蔵元の責任醸造酒。
きもと仕込みは、通常の乳酸液の添加なしに、元摺りという重労働を行い、自然界の乳酸菌を取り込んで、かつ細かな温度管理を必要としますが、出来上がった酒は深みとコクを生み出し、熟成により更に旨味を増します。

瓶詰め後、常温にて貯蔵し味を見て冷蔵庫貯蔵に切り替えました。
適度な熟感があり、まろやかに広がる旨味と丸みを帯びた酸味が食欲の秋を彩ります。秋刀魚や漬物や出汁の効いた煮物にもバッチリ寄り添います。 出す時期は少し早くなりましたが、お酒はとても良い具合になっています。
