This is a type that is easy to pair with any dish due to its gentle aroma.

Among olive oils, only those that meet strict inspection standards (acidity 0.8% or less) for aroma, taste, and acidity are recognized as "Extra Virgin Olive Oil." This product's acidity is lower than the inspection standard, averaging 0.5% or less.

The raw ingredients are solely organic olives from warm Southern Italy. They are organically cultivated mainly in the three regions of Puglia, Sicily, and Calabria.

To preserve freshness, harvested olives are finished into olive oil within 24 hours of harvest using the cold-press method.

Main varieties used:

Biancolilla: A variety widely cultivated in Sicily. Characterized by flavors of artichoke, tomato, and young grass.

Calearella: A variety often found in Calabria. It has a moderately fruity aroma with subtle notes of apple, artichoke, and herbs.
