The production process begins by adding saltwater to wheat flour and kneading well to create "noodle dough." This "noodle dough" is carefully stretched out and finished into a single somen noodle. It is a traditional hand-stretching method that has been continued in the Banshu region for about 600 years. When trying to stretch the "noodle dough" quickly and forcefully into thin strands, it tends to break, so it is gently stretched while twisting, then aged (matured), and stretched again.
