Hanakatsuo refers to dried bonito flakes that are not mold-cured like honkarebushi (fully cured dried bonito), but are shaved from ara-bushi (rough dried bonito).

◆ How to make bonito dashi
Unlike honkarebushi, hanakatsuo is used only for ichiban dashi. If you wish to make niban dashi (second extract), add an appropriate amount of additional bonito.
1. Add 15–20g of hanakatsuo to 1 liter of boiling water.
2. Once it comes to a boil again, turn off the heat and strain.
※ Do not boil the broth for a long time, as this can cause bitterness and off-flavors.
◆ How to make kombu and bonito dashi
Dashi made from kombu and bonito flakes can be used in various dishes.
1. Soak 10g of kombu in 1 liter of water overnight. (The basic soaking time is overnight; at minimum, soak for 2 hours.)
2. Place the soaked kombu and water in a pot and heat. Remove the kombu just before boiling.
Slowly extracting umami over medium-low heat is the secret to delicious kombu dashi.
3. When it starts to boil, add 15–20g of bonito flakes per liter (if using freshly shaved honkarebushi, half that amount is sufficient).
4. After simmering for about 2–5 minutes over medium-low heat, strain the broth.
◆ Storage after opening
Ideally, consume all of the product after opening to enjoy its full flavor. If not, remove the air from the bag and store in the freezer. Quality will deteriorate over time, so please use it promptly after opening.

During the mid-Edo period, a long era of peace allowed the "dashi" culture to spread widely among common people.
When Tsukiji Fish Market was located in Nihonbashi, high-quality kombu produced nationwide was gathered in Osaka, called "Kombu from Kamappo/Osaka," and high-quality bonito flakes from Edo/Tokyo, called "Katsuobushi from Edo/Tokyo."
Our company originated from Kaga-ya Abe Chobei Shoten, a long-standing bonito wholesale shop in Nihonbashi/Kobuna-cho, which has continued since the Edo period.
Before the war, my father, Minoru Inaba, who started as an apprentice and rose to the position of head clerk, founded Inaba Shoten, a bonito wholesale business, in 1964 (Showa 39).
The second generation, Yasuzo Inaba, inherited the wholesale of premium bonito, expanded sales channels, and began processing shaved bonito.
Furthermore, in collaboration with bonito craftsmen in Makurazaki, Kagoshima Prefecture, we continue to produce top-quality bonito using locally caught, pole-and-line caught fish.
Although the location has moved to Harumi, Chuo Ward, the pursuit remains for authentic bonito.
