**Taiko Hana Katsuobushi Dashi - For Everyday Use**
This is a popular hana katsuobushi (bonito flakes) known for its excellent dashi (broth) extraction.
Please use it for ichiban dashi (first dashi).
Hana katsuobushi is shaved "arabushi" (unmolded dried bonito), which has not undergone the mold-culturing process like "honkarebushi" (fully dried bonito).
It is characterized by the distinct aroma of bonito and a smoky flavor unique to arabushi.

**◆ How to Make Katsuobushi Dashi**
Unlike honkarebushi, hana katsuobushi is only suitable for ichiban dashi. If you wish to use it for niban dashi (second dashi), add an appropriate amount of "oi-gatsuo" (additional bonito flakes).
1. Add 15-20g of hana katsuobushi to 1 liter of water once it boils.
2. Once it returns to a boil, turn off the heat and strain.
* Do not extract dashi for extended periods, as this can easily result in an astringent or bitter taste.
**◆ How to Make Kombu and Katsuobushi Dashi**
Kombu and katsuobushi dashi can be used in all kinds of dishes.
1. For 1 liter of water, use 10g of kombu and soak it overnight. (Overnight is standard, but soak for at least 2 hours).
2. Heat the water with the soaked kombu. Remove the kombu just before it boils.
Gently extracting the umami over low to medium-low heat is the secret to delicious kombu dashi.
3. Once boiling, add the katsuobushi and reduce heat to medium. Use 15-20g of katsuobushi per liter of water (if using freshly shaved honkarebushi, half this amount is sufficient).
4. Simmer for about 2-5 minutes over low to medium heat, then strain.
**◆ Storage After Opening**
To enjoy the best flavor, it is ideal to use the entire package after opening. If you cannot use it all, remove air from the bag and freeze it. The quality will degrade over time. Please use after opening as soon as possible.
